Only concern is topping with cheese is more important thats take the show ! I never heard Brinjal as a starter but after tasting this ! one of the best starter i have ever tasted ! so when u have a guest plan this and i am sure u will be the winner ! so as Brinjal !
Brinjal 4 to 5 medium size
Garlic – 5 nos finely chopped
Onion – 1 large finely chopped
Drumstick Leaves – 1 cup cleaned
salt – as required
red chilly powder – 1 tbsp
turmeric powder – 1tsp
coriander powder – 1/2 tsp
oil – 1 tbsp + 1 tsp
Mozzarella cheese for toppings !
Cut the brinjal in to two halves ! Take a pan add some water and keep the brinjal facing the flesh side downwards ! adjust salt ! allow it to boil for 10 to 12 minutes ! off the flame !Once cool down and scoop the flesh from the brinjal keep the skin part because we are going to cover with the stuffing and cheese and bake it !
Now heat the kadai add the tbsp of oil and once heat add the garlic saute for a minute and add the chopped onion and saute till it turns semi brown !
Then add the drum stick leaves and saute for a minute ! close the lid now and keep it in the low flame ! for 5 more minutes !
now add the spicy powders and turmeric and adjust salt ! saute till it cooked now add the brinjal flesh and saute for 5 minutes it mixes well ,once cooked off the flame !
Now take the brinjal pour the required amt of these masala’s and cover with cheese ! do it for rest ! now pre heat the oven !cover the plate with foil paper and drop some oil and spread it nicely ! now bake the brinjal for 15 minutes at 170 C else till it melts !
- Instead of drumstick leaves u can use spinanch too !
- infact u can mix the grated cheese with the spinanch and do the stuffing !
- Make sure u are using the big brinjal so that u can scoop the flesh
