I yet to explore the baking and chaat items coming year i am sure i can full fill all the recipes ! Coming to this recipe , this is kerala traditional payasam recipe ! they prepare this for the occasion ! so i am positing this to celebrate my one year of cooking blog ! off to the recipe

Jackfruit – 10 to 12 (ripe one)
Jaggery – 1/2 cup
Thick coconut milk – 3/4 cup
Water – 1/4 cup
Ghee – 3 tbsp
Cashew – to temper
chopped coconut – to temper
Remove the seed from jack fruit and pour it in the pressure cooker and add immerse level of water and leave for 3 whistle or till it get smooth!once cooked strain the water and grind it to get the paste texture and set aside!
Mix the jaggery in water well and strain it completely to remove the stone and other dust particles , Heat the kadai and pour the 2 tbsp of ghee once melt add the jaggery water allow it boil ,no need for string consistency.
once boiled add the smashed jack fruit and allow it to mix well ! make sure the heat in low flame!
once it mixes well it oozes the ghee, or else if boiled well , add the coconut milk and mix well , and make sure the flame in medium , just saute for 3 to 4 minutes ! off the flame ! do not over boil it otherwise the coconut milk wll get separated !
Heat the pan again and pour the 1 tbsp of ghee and fry the cashew and coconut and temper it in payasam !
- Once u added the coconut milk mix well , do not over cook it ! otherwise it wll get separate !
- Use the well ripe jack fruit !
- If u do not want coconut milk u can replace with half milk and half coconut milk !
- Adding fried coconut will give the crunchy taste !
