Coming to this recipe ! this is one of the tastiest Pickle in Raw mango instant version ! Though i like the instant version more ! this one is easy and just spread the thokku in chapathi or Dosai have a bite ! u can feel the divine !
Shredded raw mango – 1 to 1 /2 cup
Red chilly powder – 1 tbsp + 1tsp (adjust according to the taste)
hing – a pinch
salt – as required
Gingelly oil – 100ml + 1tbsp
Mustard seeds – 1 tsp
curry leaves – 5 to 6 to temper
Heat the kadai and pour the 100 ml oil once heat add the mustard and curry leaves once cracked add the hing and saute for a minute !
Then add the shredded raw mango and saute for a minute and close the lid and keep the flame in low let it be cook for 5 minutes, now when u open the lid u can see the shrinked raw mango , then add the red chilly powder and adjust salt and pour the tbsp of oil and saute well and close the lid , check after 10 minutes , now the oil oozes , thats the consistency saute it again well for 5 minutes , off the flame !
Serve with Curd rice or roll it in chappathi or Dosai !
- Gingelly oil must it takes the taste to next level !
- The color may vary , it depends on the red chilly powder !
- make sure the raw mango cooks well !
- It w’ll stay in fridge up to a week !
- But without refrigeration it w’ll stay for a day !
