Recipe Source – Viren Kashyap
Eggplant – 1 big size
Onion – 2 medium size
Tomato – 2 medium size
Garlic – 2 tbsp finely chopped
Ginger – 1 tbsp finely chopped
Red chilly or green chilly – 5 (adjust with the family taste)
Turmeric powder -1 tsp
Red chilly powder – 1 tbsp
Garam masala powder – 1 tbsp
Salt – as required
Oil – 2 tbsp + 1 tsp
Mustard seeds – 1 tbsp
Jeera – 2 tsp
coriander leaves – 1 tbsp finely chopped
Wash the Brinjal and wipe the water completely ! Now brush the Brinjal with a tsp of oil ! do a small slit and keep the one garlic with skin ,Heat the Gas and keep the brinjal let it be in high flame, If u are scared to use the direct flame Use the Phulka Mesh ! , in Btw change the position and make sure all side of brinjal are completely smoked ! Allow it to cool completely and remove the skin and smash the smooked Brinjal !
Heat the kadai and add the two tbsp of oil and once heat add the mustard seeds once cracked add the jeera let it splutters then add the Broken red chillys saute for a minute then add the garlic and ginger and saute till raw smell goes , Then add the finely chopped onion and saute till it turns semi brown !
Now add the chopped tomatoes and saute for 2 to 3 minutes , the moment it starts oozes its juice add the turmeric powder, red chilly powder and salt and make sure it mixes well and semi cooked, then add the smashed Brinjal, saute for a minute.
Then add the Garam masala powder and saute well ! If needed add a 1/4 cup of water !
Wait till all spices cooked well and mixes well ! Enjoy the tandoor aroma with hot roti or naan!
- Generally Eggplant is cooked in Tandoor as i do have that i used my Gas
- Adding garlic inside the Eggplant is completely optional !
- I used my Briyani masala powder as i am running out of Garam masala , But no compromise on Taste! it was yummy
- Original recipe calls for Green chilly , But i replaced with Red chilly it was completely tasty !
