Mixed Vegetable Gravy

When i saw the recipe first i decided i want to prepare without seeing the ingredients when i go through the ingredients it say coconut mik and cashew :) thought why do not i change the recipe and try some mixed vegetable gravy !
Though i already have some mixed vegetable Koorma and curry ! this one is something very different and tasty : ) Yeah i changed all the ingredients measurement according to my family taste ! still it was yummy yummy! The style says Nawab gravy !  i should say partial nawab gravy since i halved the recipe ! he he ! Though it has more ingredients it is worth try!

Whenever i prepare Gravy i take a cup and keep it for next day Dosai ! It was tasty ! So go on try !

Recipe inspirations: Monsoon spice

Main ingredients:

Mixed vegetables – 2 cup finely chopped
( i used carrot,green beans, potato, cauliflower so boiled it first with turmeric and required salt  apart from these veggie i used some Mirchi and Mushroom which does not required boiling so saute with onion )
Onion – 2 medium size finely chopped
bay leaf – 1 no
Red chilly powder – 1 tbsp
Curd or cream – 2 tbsp or use 1/4 cup
Coconut milk or Water – 1 cup {Infact i used water due to weight conscious Still it was yummy}
Salt – as required
Ghee – 2 tbsp
Oil – 1tbsp

To soak 
Cashew – 5 nos
Badam – 4 nos
pista – 4 nos
Poppy seeds – 1/2 tsp
soak in the warm milk or water for 1/2 an hour

To grind 
Star anise – 1 small piece
cinnamon – 1 piece
Marati moggu – 1 piece
Mace – 1 piece
Coconut shredded – 1/2 cup

Grind the item given under “To Soak” + ” To grind ” and make a coconut cashew paste 

Paste 2 

Green chilly – 4 nos
Garlic – 5 to 6 without skin
Ginger – 1 inch cleaned and skin removed !

Grind the item mentioned above and keep aside


Grind all the paste  , i.e paste 1 and paste 2 and keep aside !

 Chop the vegetables finely and Boil the vegetables that required to be boiled by adding the turmeric and salt

Now heat the kadai and pour ghee and oil once heat then add the bay leaf and saute for a minute then add the chopped onion and saute till it turns brown ! Now add the Ginger garlic green chilly paste ! saute till the raw smell goes ! then add the required vegetables which is to be saute {i used mirchi and mushroom} ! saute it it is half cooked !

 then add the coriander powder and Red chilly powder and adjust salt ! 
Once cooked then add the cashew coconut paste ! and adjust water ! once it cooked well Then add the curd or cream and make sure it is in low flame !

Serve hot with roti or Phulka ! Garnish with coriander leaves !


  • Do not add Tomato as it will change the entire taste
  • The actual recipe calls for boiling  in coconut milk ! since weight conscious i didnt do that , so boiled in mixed vegetables water! 
  • I used mixed nuts but actual recipe calls only cashew but i changed it !
