I tasted the onion raitha first time, i naturally fallen in love with that , one point of time it has become my main meal ! Yeah i take a cup of rice and mix with onion raitha and taste it!Slurp ! So Amma try new new variety of recipe, by reading books and recipes from her friends. One fine day she prepared the raitha and served with rice and other recipes, we could not recognize the boiled potato , and taste is very different and to our surprise it has become our father’s favorite too ! I am sure u praise me after u give a try !
But It has one dis advantage , you need to finish within two hours , because of coconut and curd mixing less shell life!
boiled Potato – 2 medium size
Curd thick – 1/2 cup
Curd thin(before buttermilk stage) – 1/2 cup
Salt – as required
Hing – 1/2 tsp
Oil – 1/2 tsp
Mustard seeds – 1/2 tsp
Coconut – 1/4 cup shredded
Coriander – 2 tbsp (optional)
Green chilly – 3 to 4 (adjust on family required)
ginger – 1/2 inch finely chopped! (optional)
boil the potato by adding the required amt of salt , once boiled allow it to cool , and remove the skin and mash it nicely ! Grind the item given under ” to Grind” , now mix the grinded item to the mashed potato!
Then add the required amt of salt, hing and add the thick curd , mix well , then add the thin curd , nicely mix everything , then temper it with the item given under “to Temper” ,
Serve it as a accompaniments for Rice, i am sure you prepare this raitha often!
- You can omit the coriander and ginger part , if u do not want ! But it has special aroma and taste!
- Also adjust the consistency by adding the Thin or thick curd!
- Before adding the curd , beat well and make sure it doesnot have any lumps!
