Adding cheese to hot soup is seriously yummy ! a tbsp of shredded cheese works well ! If u are serving for kids you can add little butter ! I added the italian seasoning but then felt little bitter 😀 So u can change the seasoning as per your taste too !This is a low fat version of soup i am sure the roasted tomato enhance the soup flavor more !

Olive oil – 2 tsp
Tomato – 3 nos
Garlic – 5 nos without skin
salt – as required
Pepper powder – 1/2 tsp
Chilly flakes – 1/2 tsp
Italian seasoning – 1/2 tsp
shredded cheese – 1 tsp (for each bowl )
Cut the Tomato in to big chunks , then take a plate add the tomato and garlic and a tsp of olive oil and red chilly flakes , mix well !
now cover the tray with foil paper and add the mixture and spread it ! Then pre heat the oven – bake the tomato for 15 minutes under 170 degree celius , Make sure u are not burning the tomato!then cool it completely and grind it ! by adding little water , Heat the kadai , add the tsp of olive oil once heat add the pepper powder & saute for a minute, then add the grinded mixture and adjust water depends on the required ! do not add too much water, mix well !
then add the italian seasoning and allow it to mix ! once every cooks well ! off the flame !while serving add the shredded cheese !
- You can avoid itatlian seasoning instead you can add your favorite flavor !
- Adding garlic is very imp as it enhance the flavor !
- Instead of water you can add Vegetable stock !
- I want it very light and tasty so didnt add corn flour and milk if u wish you can do variations !
