Now my mother is with me , she is raising her eye brows whenever i prepare some snacks ! she is telling aparna ” Nee therita ” (it means u improved ) i am happy ! so coming to this recipe ! Without Vellai seedai krishna jeyanthi is incomplete ! this is a sweet version of seedai , quiet bigger than normal seedai ! and the coconut crunchy inside the seedai is highlight! so my first recipe for this year krishna jeyanthi is up !
Rice flour – 2 cups
Urad flour – 2 tbsp
Jaggery – 1/2 to 3/4 cup
Sesame seeds – 1 tbsp white or black
Butter – 1tbsp
salt – 1/2 tsp
Grated coconut – 1/2 cup
Oil – to deep fry
Remember my Uppu seedai post ? Read the tips for not bursting the seedai and proceed for vellai seedai !
First immerse the jaggery in the water (immerse level) for some times once its dissolves strain it completely to remove the impurities! or else u can add the jaggery in the kadai and add some water , and stir it dissolves and strain it completely to remove the impurities which ever works u can use that method !
Heat the kadai and add the rice flour , and saute for 3 to 5 minutes. Do not change the color of the flour , just a heat ! and sieve it twice completely to remove the stones and other impurities !
To make the URAD flour , take a cup of urad dal and saute it in the kadai , till it turns to semi brown , Not too brown , allow it to cool and grind it completely and sieve it twice !
Now take a wide bowl and add the rice flour and urad flour and give a mix, Then add the butter, salt, grated coconut, sesame seeds and mix well ,add little by little jaggery water and make a dough!
now take a goosberry size or little less size dough and knead it slightly and make a ball size slightly bigger than uppu seed size and prick it using fork ! do it for rest ! Heat the kadai and add some enough oil , once heat , start frying 4 to 5 balls (small batches ) and take it once it changes to brown color !
Drain it in the tissue paper and store it in the air tight container box!
- you may not use the full jaggery water !
- While rolling be careful Do not over do it !
- Do not worry about the color , it will be brown as we have added the jaggery !
- I didnt dry roast the coconut , if u want it u can dry roast it !
