Carrot – 2 cups (shredded or grated or finely chopped)
Turmeric powder – 1 /2 tsp
Coconut oil – 2 tbsp + 1 tsp (u may need this 1 tsp)
Curry leaves – 1 to temper
Mustard seeds – 1 tsp
Salt – as required
Coconut – 1/4 cup shredded or grated
Garlic – 3 nos
Green chilly – 3 (adjust according to the family spice level)
Jeera – 1 tsp
Peel off the skin from the carrot then Chop or shred or grate the carrots , Now heat the kadai and add the coconut oil once hot, add the mustard seeds once cracked add the curry leaves , then add the carrot ! keep it in the low flame for 10 minutes, then and there stir the carrot !
After 10 minutes, open the kadai and add the turmeric and salt , and saute till the color of carrot changed (i.e cooked) , then grind the item given under “to Grind” , now add the grinded item to the carrot ! and saute well ! if need add the 1 tsp of coconut oil !
Once everything cooked off the flame !
- Once u added the coconut saute well so that the raw smell of garlic as well as coconut goes !
- The cooking time may differ if u chop in to the cubes ! so keep an eye on them!
