I have heard this story of edison , who invented the electric bulb. Same happened to me for this maida burfi but i tried only two times before success, infact it was suppose to be my first diwali sweet recipe which is in my mind, after seeing the recipe here. Some have i made the mistake and wasted two times completely. I felt bad , because this is a very easy recipe, i was wondering how i got the flop. Then when i was discussing with Raji , she said must have used less ghee or more maida, Even my mom says the same thing. She insisted me to try with 1/2 cup today i tried and to my surprise i got it right .Thanks raji for the recipe and motivation without this i would have not attempted. so without any delay off to recipes.
Maida – 1/2 cup (all purpose flour)
Sugar – 1 cup
Ghee/ vanaspathi/ oil – 1/4 cup
cashew – 3 to 4
Vanilla essence – 1 tsp
Food color – 1 tsp (any color – i used mild yellow)
Heat the kadai and add the vanaspathi or ghee , once heat add the cashew and saute till it changes to brown color, then add the all purpose flour and saute till the raw smell goes, Mean while get ready with your greased plate.
Take non stick kadai and add the sugar and water, and allow it boil and bring it to one string consistency, You can check it by dropping the syrup in the water it will not dissolve or check between your thumb and index u will get thin line. add the essence and food color, and off the flame. (No fire mode)
add the Maida to the sugar syrup and start stirring, the mixture gets thickened, and still it is loose enough to spread in the greased plate. just tap it or use your zip lock bag to get the smooth surface. After its get cool down cut in to the desired shape, use your knife or cutter.
Then after sometime,invert the plate in to the another plate you can see the burfi. Transfer to an airtight container,tastes great,just melts in the mouth!
- If u are concern of using ghee i would suggest use vanaspathi , But do not try to decrease the measurement of vanaspathi or ghee , u wont get the right consistency , yes i failed twice, experience telling.
- I do not find the taste difference in ghee or vanaspathi both are good. Dam good just melt it in your mouth.
- After mixing the maida in to the sugar syrup, be careful because everything finish less than 2 minutes. Also keep eye on the one string consistency otherwise the taste as well as shape differ.
- You can use any food color.
