Coming to this recipe i adopted this recipe from Priya versatile , this recipe is eggless as well as butter less, and out come is super Cannot expect much It was tasty and spongy and it came out very well . does it look nice?
Preparation time : 20 minutes
Cooking time : 30 minutes
Servings : 8 muffins + 1 cake (6 inch pan)
All purpose flour – 2 cups
Sugar – 3/4 cup
Baking powder – 1 tsp
Baking soda – 1 tsp
Yogurt – 1 cup
cooking oil – 1/2 cup
Milk – 1/4 cup
Vanilla essence – 1 tsp
Chopped strawberries – as needed to do the toppings.
Clean your strawberry and finely chop it.
Take a wide bottomed vessel, add the sugar, and curd mix well till sugar dissolves, then add the cooking oil, milk, vanilla essence, mix well,
Now take a another vessel add the baking powder, soda, all purpose flour sieve twice, then add this mixture to the wet ingredients. mix well ,If u feel it is not having proper consistency add little milk, Do not add more, then add the chopped strawberry and mix well do not over mix the batter.
Grease the muffin tray or cups with butter and pour the batter in the cups 3/4 level. Do not fill full as it will raise nicely. then decorate the muffins with strawberry.
Pre heat the oven and then keep the muffins and bake it at 170 degree, for 20 to 25 minutes, do check by inserting the knife or tooth pick and check it comes out clean. either serve warm or cold purely your choice, it was good for 3 complete days.
- Do not over mix the batter
- You can add any berries.
- Do not add more sugar than mentioned it was perfect,
- For consecutive bake , do not pre heat for every batch, once pre heated you can make two to three batch.
- I was running shot for sugar, then relaized i have 2 full packets of brown sugar so added half brown sugar and half normal sugar.
