Coming to today recipe , It is tawa pulao One of Mumbai street food. , where they serve this recipe with papad and Raitha. One of the easiest One pot meal i have prepared so far , except boiling and cooking Basmathi rice and veggie.
Mixed vegetables – 1 cup
Onion – 1 no
Tomato – 1 no
Red pepper or Green – 1/ 4 size of the pepper finely chopped
Ginger garlic paste – 1 tbsp
Salt – as required
Turmeric powder – 1/2 tsp
Pav bhaji masala powder – 1tbsp
Red chilly powder – 1tsp
Coriander powder – 1tsp
Ghee – 1 tsp + 1 tsp (to grease the kadai for cooking the basmathi rice)
cooking oil – 2 tbsp
Fennel seeds – 1 tsp
Jeera (cummin seeds) – 1 tsp
Basmathi rice – 1 cup
Soak the basmathi rice in the hot warm water for 30 minutes, And grease the kadai with ghee , drain the water from basmathi rice , heat the greased ghee kadai and add the basmathi rice just saute for few seconds and add the water, allow it boil once it boils well keep it in the low flame and cook for 10 minutes mean while cover the kadai , after ten minutes if u check you can see the cooked long basmathi rice, if u feel still water is there allow for 3 more minutes, then off the flame and just stir it once and close it for 5 minutes, open up you can see the separated rice.
Measure the water level as per instruction given in the Rice Package, Usually i measure 1: 2 i.e 1 cup rice need 2 cups of water. it may differ from package to package. Also i used India Gate Basmathi Rice.
cut the mixed vegetables in to the cubes, and boil the vegetables in the kadai by adding the enough water and required amt of salt. I used , long beans, potato, Green peas, carrot and cauliflower. make sure you clean the cauliflower well before it goes to boil. Do not discard the drained water , it requires later.
Once boiled drain it completely and set aside, Mean while finely chop the onion , tomato, and red pepper. Get ready with your ginger garlic paste. Heat the kadai and add the 2 tbsp of oil once heat add the jeera and cummin seeds once cracked add the onion and saute till it turns semi brown then add the ginger garlic paste and saute till the raw smell goes, then add the chopped tomato and red pepper and mix well and saute till tomato oozes the juices.
Then add the boiled mixed vegetables, and add the salt, coriander powder, red chilly powder, turmeric and Pav bhaji powder and mix well , add the drained boiled mixed vegetable water, (just 1/4 cup) and allow it to mix well , stir in between once everything cooked off the flame and add the ghee.
Now mix the Cooked rice with the vegetables and mixes well ,
Serve with Papad and raitha.
- Take a caution on salt, because you are adding in the boiled vegetables, so keep eye on that.
- If u are not comfortable with too much spice powder, just add the turmeric and pav bhajji powder alone.
- cook the basmathi rice well , separated one so that the puloa come out nicely, anything goes wrong in the rice wont have perfect texture.
- the main ingredient is Pav bhaji masala, rest are up to your choice, like adding green chilly, and adding bay leaf
