When i landed mumbai, very few hours i admitted in hospital for lung infection , So very badly i could not try or taste any food at mumbai, But whenever i travel i caught local electric train , Mumbai was fast (now also) so i have seen few people taking their breakfast in the train itself. it was very new to me, Because me never had anything like that, I knew they were taking chapathi but never knew it has all those veggies and stuffing.
Later few days when i enquired my sister told it is veg kathi roll , (name itself is tempting right? ) then she explained me, the way of preparation, it was catchy, So i tried for the first time in my home, i completely love with this roll, Filling is purely your choice, but i would recommend you to try my filling, because it was yummy along with greenchutney and cheese, Worth trying and filling lunch.
Green chutney – 1 tbsp for every Roti
Cheese – as required
Spring onion leaves – finely chopped to temper
Filling – as per need
Chapathi or Roti
To make the Dough
Wheat flour – 1 1/2 cup
Oil – 1 tbsp
Water – to make the dough
Salt – as required for the dough
For the Filling
Mixed vegetables – 1 cup
I used carrot, beans, onion,tomato, garlic ,green chilly,green peas , potato, purple cabbage.
Salt – as required
Oil – 2 tbsp (adjust according to the need)
turmeric powder – 1/2 tsp
Coriander powder – 1 1/2 tbsp
Red chilly powder – 1 1/2 tbsp
Coriander leaves – 1 cup finely chopped, cleaned
Green chilly – 3
Garlic – 3 nos
Salt – as required
Lemon juice – 1 tsp
Prepare the dough by mixing the wheat flour, oil and salt and add the required amt of water and make sure your dough is pliable enough, Now heat the kadai, add the oil , once heat add the green chilly and garlic and saute for a minute so that raw smell goes, then add the onion and tomato and saute till it oozes it water,
then add the rest of the vegetables and saute for a minute, Then add the spicy powder and salt and saute till everything cooks well, Mean while you can prepare the green chutney and chop the cheese and spring onion
Mean while prepare the roti by kneading the dough in to circle and cook it in the tawa by pour some oil and cook on both sides, once you green chutney, roti and cheese and chopped spring onions ready , its easy to prepare. Take the Chapathi and keep it on the plate where you are going to serve, pour the tbsp of green chutney in the center of roti and spread straight , then keep the cooked vegetables, then keep the cheese and spring onions. look at the below picture you will get how to arrange.
once everything is kept now close the roti by folding it from two sides, cut the roll diagonally and wrap the chapathi end and tight it so that the filling wont fall .
It wont required any side dish this itself is filling, want to have a bite?
