recipe adaption : Kitchenwhisphere & Aparna’s My diverse kitchen
Preparation time : 20 minutes + waiting period of the dough to get double in volume.
Cooking time : 25 minutes
Servings – 3 nos
For Herb oil
Olive oil – 1/4 cup
Chilli flakes – 1 tsp
Minced garlic – 5 to 6
Oregano – 1 tsp
salt – a pinch
mozzarella cheese – as needed to cover the bread
Tomato – 2 medium + if needed
basil – 4 to 5leaves (but i didnt use since i do not get it )
Main ingredients to form a dough
APF – 1 1/2 cup
Instant yeast – 1 tbsp
Salt – a pinch
Sugar – 1 tbsp
warm water – 1/2 cup + if needed
Olive oil – 4 tbsp
First prepare the herb oil by mixing all the ingredients given above. and keep aside.
Then prepare the dough by adding the salt, sugar, yeast and APF and mix well, then add the water as required then form the dough , then add the olive oil , and knead until you have a soft elastic dough that is just short of sticky.now shape the dough in to circle and place it in the well oiled bowl and wait till it becomes double in size.
Then divide the dough into two equal portions and lightly roll them (or press out) out,. Roll each portion out.It alright if it’s an odd shape because Focaccia is really a “rustic” bread.
- Actual recipe calls for Bread flour, since i do not have i have used the APF
- Also if u have brasil leaves u can use it for toppings.
- Use melty/ stringy” kind of cheese you can find.
