Mean while i got opportunity to get my laptop service and change in OS and everything is ready and i am ready to post today. So coming to today recipe, we are brinjal lovers, my regular reader knows, I generally try different dishes with Brinjal, be it for lunch or dinner or breakfast, So every week twice or thrice we eat this veggies, Never bored of it. This Time i do not want to go with the usual stuff , When i want to try i suddenly thought why do not i try tawa masala, like i do the raw banana, i tried and it came out very nice and its a perfect side dish for Rice, And Roti, Also you can mix this thokku with Plain rice and can have it as such with Raitha. So without further delay off to recipe. Also try with your own spice masala’s , it comes good.
To make the Tawa fry
Brinjal – 10 – 12 pieces with 1/2 inch thick. (cut in to the Round shape)
Red chilly powder – 2 tsp
Coriander powder – 1 tsp ( if u have any other spice powder like sabji powder or masala powder u can replace it )
salt – as required
turmeric powder – a pinch
Oil – to make the Tawa fry. so whenever required just drizzle some oil.
shallots – 1/4 cup
ginger – 1/2 inch piece
garlic – 5 without skin
green chilly – 2 nos (adjust according to the spice required)
Fennel – 1 tsp
To Make the semi gravy
Oil – 2 tbsp
Mustard seeds – 1tsp
Urad dal – 1 tbsp
Curry leaves – few to temper
Onion – 2 medium size finely chopped
tomato – 2 medium size finely chopped
Red chilly powder – 2 tsp
salt -as required
Coriander leaves – to temper
First grind the items given under ” To Grind ” nicely then Wash the brinjal and cut in to the 1/2 inch thick and round in shape, then add the red chilly powder, salt, turmeric powder, and grinded masala’s. Mix well and make sure its evenly coated well, Keep aside for 10 minutes.
Then Drizzle some oil on the tawa and place the brinjal pieces on the tawa, and cook on both sides. whenever it requires just drizzle some oil, Make sure it cooked well. and collect the brinjal in a bowl and keep aside.
Heat the kadai and pour the oil once heat add the mustard seeds once cracked add the urad dal and curry leaves, once urad dal turns in to semi red , add the chopped onion and saute once the onion changes it colour add the tomato and saute till tomato oozes its water, then add the red chilly powder and sprinkle some water and saute for 5 to 8 minutes.,
wait till everything blend, then add the tawa brinjal and mix well, and saute for some 10 minutes, it becomes thick
while servings temper it with Corainder leaves, and perfect side dish for Roti as well as Rice Also u can mix it with the Rice and have it .
- Then spices i mentioned here are my own choice, So you can always try with your own spices,
- Make sure the Brinjal is cooked well on the tawa.
- And the gravy also is simple and it is my own choice, you can try with your own gravy method too.
- You can use any variety of brinjal subject to that you maintain the round and thick for cooking it in TAWA.
