I often make this fry or cauliflower pepper fry which is hit in my blog 😀 , the specialty in this curry is garlic and fennel , though we are adding other spices. I loved this cauliflower stir fry and variety rice combo much.You can also paired with Phulka too. So let us get on to the recipe.
Cauliflower florets – 2 cups (cleaned and cut in to the chunks)
onion – 2 medium size
garlic – 3
fennel – 2 tsp
curry leaves – few to temper
red chilly powder – 2tsp
coriander powder – 2 tsp
garam masala powder – 1 tsp
turmeric – a pinch
salt – as required
oil – 2tbsp + 1 tsp
Clean the cauliflower and wash twice and boil it for 10 minutes, (half cooked) by adding the salt, once boiled strain the cauliflower completely and keep aside. make sure your cauliflower has florets.
Heat the kadai and pour the oil once heat ,add the mustard seeds, once cracked add the fennel then add the garlic and curry leaves, saute for a minute. Then add the chopped onion and saute till it turns semi red.
now add the boiled cauliflower, and saute for a minutes, then add the spices, turmeric, and salt, and mix well .saute then and there.
Once everything blend and mix , off the flame , serve it with variety Rice.
- do add the curry leaves in the initial stage so that it will be well blend with garlic and fennel and nice aroma too.
- Adjust spices according to the family you can also alter the required spicy powder.
- Make sure you do not over boil the cauliflower, and it will be messy when u saute.
