To make the outer layer
All purpose flour – 3/ 4 cup
Sooji or Rawa – 2 tbsp
ghee – 2 tsp
Oil – 1 tsp
salt – as required
Water – to make a dough
To prepared the filling
Boiled potato – 1cup
onion – 1 medium size finely chopped
Garlic – 5 to 6 finely chopped
Green peas – 1/4 cup
Red chilly powder – 1 tsp
Coriander powder – 1 tsp
Garam masala powder – 2 tsp
salt – as required
Oil – 2 tbsp
Green chilly – 2 nos finely chopped
Mustard seeds – 1 tsp (optional)
jeera – 1 tsp
Green chilly – 2 tsp
Oil – to Deep fry the samosa.
Take a wide vessel and pour the given items under ” To Prepare the dough” except the water. then mix it and it will form a crumble texture. then add little water and form a dough.Leave it for 30 minutes.
Mean while prepare the inner filling, by heating the kadai. Then pour the oil and once heat add the mustard seeds once cracked add the green chilly and jeera and saute for a minute then add the chopped garlic and chopped onion and saute till it turns semi brown. then add the green peas and smashed potato. and saute well.
Now add the salt, and spices and mix well , and saute till every thing blends well , this will take less than 15 minutes, if needed just sprinkle some oil.
Do it for the rest of the dough, and heat the enough oil to deep fry the samosa and deep fry it , once the samosa turns in to brown strain the oil and transfer it to the tissue paper to absorb the oil .
So serve the samosa with hot green chutney or choice of yours, but we never have a side dish as such , we love the filing as always, so wont expect much.
- The filling is purely your choice, But the one i have given is kind of equal to chat shop one. I loved it completely. You can adopt this or prepare your own variations too.
- While folding make sure you sealing it properly so that the filling wont come out.
- Do not pour the filling completely leave some space for closing.
- If u are not comfortable with home made version you can always get the read made pastry But i would like u to try with home made its always the best .
