Its been long that i baked a muffin.when i checked my pantry i got a full packet of chocolate chips, without further delay i tried the muffin with egg less and no butter , it turned out beautifully, and i always wanted to try with Corn flour, so i replaced the 1/3 cup APF with corn flour, and the result is below. All purpose flour – 1 cup
Corn flour – 1/ 3 cup
Sugar – 3/4 cup
Curd – 1 cup
Oil – 1/2 cup
Baking soda – 1/2 tsp
Baking powder – 1 tsp
Vanilla Essence – 1 tsp ( i used butter scotch)
Choco chips – 1/2 cup
Grease the muffin cup and set aside, take wide bottomed vessel and sieve the APF and corn flour for evenly mixing , take another vessel add the curd and sugar beat well till sugar dissolves, once dissolved add the soda and baking powder and mix well and set aside for 2 minutes. later u can see some bubbles.
Now add the oil and essence and evenly mix. now pre heat the oven. then gently add the flour to the wet ingredients, and mix well , and reserve the last tbsp of the flour,
Add the choco chips to the flour, and mix well and add to the batter, and gently mix. pour the batter to the greased muffin tray fill 3/4 cup. and top it up with the choco chips if u wish. Bake the muffins for 15 to 20 minutes , until the tooth pick comes out cleanly,
Take out carefully from the tray and cool in the wire rack .
- While mixing the batter, mix it gently do not over beat it .
- If u do not have corn flour use it APF completely .
- I always use the fresh batch of set Curd, so far i have not failed, infact all my muffins are raised well and so as spongy.
