couple of weeks back i received my Good food Magazine,While reading this idla caught my eyes, i am seriously double impressed with the recipe and pictures, i just altered the rice flour measurements as i feel that 1 3/4 cup wont work with 1/4 cup of urad dal. To my surprise it came out very nicely i seriously enjoyed the idla with Spicy tomato chutney (with garlic flavored) . White dhokla is a gujarathi snack recipe which is also called as IDLA(according to the magazine), According to my knowledge , IDLA is combination of IDLY + DHOKLA hence forth the name of the dish. So off to recipe
Rice flour – 1 1/2 cup
Urad dal – 1/ 4 cup
hing – a pinch
salt – as required
Lemon juice – 1 tbsp
Soda – 1tsp
Oil – 2tsp
Mustard seeds – 1tsp
jeera – 2 tsp
Coriander leaves – few to temper
Soak the urad dal in the enough water for 2 to 3 hours,once soaked strain the water and transfer the dal to mixie and grind it nicely, sprinkle some water when never required do not grind it liquid, grind the way we grind for our usual idly stuff, take a bowl add the rice flour,urad dal, salt, and little hot water, hing and mix well make sure the batter is little liquid like our usual one, then add the lemon juice and mix well and allow it to ferment it.
You can see the fermented batter next day, and add the cooking soda and mix well , grease the required plate,or pan,and pour the enough batter, and steam it for close 15 to 20 minutes, mine got ready in 17 minutes. i used my cake pan (9 inch one though i have 3 ladle of left over batter) .
Heat the kadai and temper the item given under the “to temper” .once steamed, carefully take out the plate or pan ,and invert the pan or plate ,the idla will come out nicely , just tap the pan otherwise, or else use your knife , transfer the tempered item to the IDLA, and slice it as required. serve it with hot Spicy chutney.
- You can temper it with pepper powder too for different variations.
- Actual recipe calls for 1 3/4 of rice flour for 1/4 cup of uraddal,i bit concerned and felt it wont work so changed the measurements accordingly.
- Choose right pan or plate to steam,so that you retain the shape.
- Grease the pan or plate before you pour the batter,it helps the steamed idla to come out cleanly.
- A tbsp of sugar can be added for the milk taste, but i did not add.
