I have a great problem of taking veg briyani outside, as i feel it has a very strong flavor, which i cannot bear. i tried briyani only in Kailash Parbhat, its good damm good. After that i never tried any briyani , i am quiet good in making at home. Even i have impressed my husband many times, and so as friends . The following recipe is easy one pot meal, where u can make it for lunchbox too. its very easy hardly takes 30 minutes less. So ready to try this . Go on

soaking time : 30 minutes
servings – 3
To soak and grind :
Cashew – 5 nos
garlic – 6 nos
poppy seeds – 1 tsp
fennel – 2 tbsp
coriander leaves – 1/4 cup finely chopped
milk – 2 tbsp
Ghee – 1tbsp
oil – 1 tbsp
Mint leaves – 1 /4 cup
onion – 2 medium cut in to straight strips
Tomato – 1 large finely chopped
Mixed vegetables – 3/ 4 cup ( i used potato, green beans,carrot )
Cauliflower,peppers ,Mushroom, green peas paneer can also be used.
salt – as required
red chilly powder – 2 tsp
coriander powder – 2 tsp
Garam masala – 1 tsp
Rice – 1 cup ( i used basmathi rice )
Water ratio is 1:2 , also if u are using basmathi rice cook as per the instruction , also i soaked the basmathi rice in hot water for 30 minutes, then used 1 : 2 water ratio
Soak the item given under ” To soak and grind ” , Except coriander leaves,once its soaked well grind it along with Coriander leaves. Also soak the rice in the hot water for 30 minutes.
Heat the kadai and pour the ghee once melt add the oil , once heat add the mint leaves,saute for a minute, then add the chopped onion and saute till its turn in to brown , then add the tomato and saute till it oozes it water, then add the grind masala, saute till raw smell goes,
Then add the mixed vegetables and along with spices and salt, and saute till everything half cooked, off the flame,
strain the water from the rice, pour the vegetable mix in the rice cooker along with Rice and required amt of water, and adjust salt, and mix well , turn the button to cook and close the lid
- The same method can be followed for pressure cooker too, subject to that,close the cooker after it starts boiling, once its leaves 2 whistles, keep the flame in low for 5 minutes and off the flame.
- Always grease the bottom with ghee for not getting the burnt texture.
- This is a mild yet flavored rice, i have used all the three spices, if u want you can alter according to the need, by adjusting the spice measures.
