well Climate is the reason for the today’s recipe, Rajesh is having hectic days , he is not taking food
properly , So now a days what ever he wish i am making without any complaints. All of a sudden he asked for the tomato soup as he feels very lazy and tired. So i tried the tomato soup with Carrot , and to my surprise it came out well . He liked much too, i served the soup with Bread toast, I must say its a winner.
I generally boil the tomato for making soup , this time i thought why do not i steam ? i steamed along with my Dal, Also here i have used only a tbsp of butter, if you do not want butter just use the olive oil. I have already shared my ROASTED TOMATO SOUP in this blog which has cream . So this time i have added the milk . i must say its good Soup for the weather and lazy days . Come on try and give me the feed back .

To Steam and Grind
Tomato – 2 medium size
Carrot – 2 medium length
To make a soup
Butter – 1 tbsp
onion – 1 medium size (cut in to thin straights )
garlic – 1 medium (crushed)
milk – 1/2 cup
pepper powder – 1/2 tsp + adjust as per need
Italian dressings – 1/2 tsp
salt – as required
water – 1/2 cup
Wash the tomato and carrot & peel the carrot skin, and cut in to the medium chunk size (say 1/2 inch thick) steam the tomato and carrot, once steamed , just remove the skin of the tomato. and grind in to a smooth paste, by pouring 1/4 cup of water. If u want to strain it , do that but i did not do i completely grind the steamed veggie. I steamed the veggie along with my dal in the cooker, feel its good .
Take the kadai and add the butter once melt, add the chopped onion saute for 30 seconds then add the crushed garlic, saute for 2 minutes once onion are mushy add the grind tomato carrot paste, and 1/4 cup water. just bring it to boil and add the milk. mix well keep the flame in medium .
Add the pepper, italian dressing along with required amt of salt . mix well . keep the soup in the flame for 5 to 10 minutes. off the flame .
serve hot with some toasted bread or. if u want you can add the coriander leaves for tempering. since i added italian dressing i do not want any other dominant flavor to occur .
- I would suggest you to try with both veggie, instead of either carrot or tomato.
- Here i have used a tbsp of butter , if u are weight consious person do cut it and add the olive l.
- I have used the heritage milk , U can even use some low fat milk.
- Do add the italian dressings, it has a nice aroma and flavor.
- Do not add the dressings more than mentioned , it wont be good.
- I do not want thick soup, so i added water, if u want thick completely replace it with milk itself.
