Yield – 20 nos
All purpose flour (maida) – 1 cup
oil – 1 tbsp
salt – as required
Water – as required to make a dough
oil – to deep fry
Oil – 2 tsp
Fennel seeds – 1 tsp
onion – 2 medium size
salt – as required
red chilly powder – 1 tsp
garam masala powder – 1 tsp
maida – 1 tsp
milk – 2 tbsp
Take a wide vessel and add the all purpose flour, salt, oil and give a nice mix then slowly pour water and start making the dough, The dough should be stiff. Then close the dough with some white cloth and leave a side for 1 hour.
Mean while you can make the filling, heat the kadai and pour the oil once its ready add the fennel seeds once cracked add the onion and saute till its half cooked then add the spices and required amt of salt. saute till everything blend and mix. off the flame.
Now take the dough and divide in to the equal balls, while working on one dough other dough should be covered with the cloth . Take a single ball size dough and dip it in the flour and knead it to the medium size circle shape as shown in the figure.Now cut the circle shape kneaded dough in to square shape as shown in the figure, and remove the side parts, then again cut in to three equal strip shape , hope the below picture gives you an nice idea of how to get the shape. Do not make too lengthy long strips because it wont cook properly
Keep the tsp of filling in the strip edge, and try to fold it as shown in the figure, at the edge apply the maida milk paste to cover the samosa properly . keep aside and try to cover it till you finish the batch.
Heat the enough oil once hot, deep fry the rolled shaped samsosa. Serve it with Green chutney or as such.
You can choose your own filling, but the one above is perfect road side taste.
You can even get the ready made sheet from the shop and cut in to desired shape.
make sure you are sealing properly otherwise end up in opened samosa.
